I keep a few cookbooks around, ok more than a few. I keep Matty Matheson: A Cookbook right next to Bourdain and The Publican, this is a fantastic resource.
In his debut cookbook Matty Matheson shares memories of the foods that helped defined him as a chef and a person. In this book he shares the recipes that he grew up with as well as the dishes that took him through culinary school and beyond. We get his versions of classics like Seafood Chowder, and Gumbo as well as restaurant recipes like Bavette, and his infamous P&L Burger. His Coca Cola Pork Belly is one of the most delicious Pork Bellies I’ve ever made, a great foundation to work off of. Matty Matheson: A Cookbook is a great collection of recipes from one of my favorite chefs.
I am a cookbook collector and read them like an actual book. My cookbooks are all dog eared, full of sticky notes. You would be hard pressed to find a page without something pencilled on it. As a matter of fact, if I have a “clean” cookbook on my shelf, it won’t be there for long. As I said earlier, this book is wedged between the Publican and Bourdain. That means I reach for it often.
